The details

Italian law defines dried durum wheat pasta (pasta di semola di grano duro) as made from durum wheat semolina and water, and sets separate rules for egg pasta. Most supermarket dried pasta follows this formula and is vegan.

Fresh pasta from the chilled aisle, tagliatelle and lasagne sheets labelled “egg”, and filled pastas such as ravioli and tortellini often contain egg, cheese or meat. Some Asian noodles also contain egg. Check the ingredients; egg is emphasised as an allergen in the UK and EU.
