Horchata with Oat Milk
★★★★★★★★★★ No reviews yetA creamy, cinnamon-scented Mexican-style horchata made by soaking rice and cinnamon overnight, then blending with oat milk. Refreshing over ice and naturally vegan.
Method
- Rinse the rice briefly, then put it in a bowl with the cinnamon stick and pour over the hot water.
- Cover and leave to soak at room temperature for at least 6 hours or overnight.
- Tip the rice, cinnamon and soaking water into a blender and blend on high for 1–2 minutes until as smooth as possible.
- Strain through a fine sieve lined with muslin or a nut-milk bag, squeezing out as much liquid as you can. Discard the pulp.
- Stir in the oat milk, sugar and vanilla until the sugar dissolves. Taste and add more sugar or water if you like.
- Chill well. Stir before serving over ice with a pinch of ground cinnamon.
Tips, storage & swaps
Is horchata vegan? Mexican horchata de arroz is based on rice and cinnamon, but many recipes and shop-bought versions add cow’s milk or condensed milk, so ask or check the label. Spanish horchata de chufa is made from tiger nuts and is usually dairy-free.
Gluten: rice is gluten-free, but many oat milks are not; use an oat milk labelled gluten-free, or almond or rice milk.
For bartenders: horchata pairs well with aged rum or reposado tequila (try 40 ml spirit to 120 ml horchata over ice), or use it in place of milk in a White Russian-style drink.
Keeps for 3 days in the fridge; it separates on standing, so stir or shake well.
Every recipe on itsvegan is 100% plant-based: no meat, fish, dairy, eggs, honey or gelatin. Always check packaged ingredients such as chocolate, bread and wine for hidden animal products.
