BBQ Jackfruit Pulled Sandwiches
★★★★★★★★★★ No reviews yetYoung jackfruit shredded and slow-cooked in smoky homemade barbecue sauce until sticky and tender, piled into soft buns with crunchy slaw. A crowd-pleasing take on pulled pork.
Method
- Rinse the jackfruit well, then cut away the hard triangular core from each piece and squeeze out excess liquid. Pull the pieces apart with your fingers or two forks.
- Whisk all the BBQ sauce ingredients together in a jug.
- Heat the oil in a large frying pan over medium heat and cook the onion for 6–7 minutes until soft and golden.
- Add the garlic, smoked paprika, cumin and onion powder and cook for 1 minute.
- Add the jackfruit and cook for 5 minutes, stirring, so it takes on some colour.
- Pour in the BBQ sauce, cover and simmer on low for 20 minutes, stirring occasionally. Shred any remaining chunks with two forks as it softens.
- Uncover and cook for a final 3–5 minutes until the sauce is sticky and clings to the jackfruit.
- Meanwhile, toss the cabbage and carrot with the vegan mayo and vinegar and season with salt and pepper.
- Toast the buns, then pile in the jackfruit, top with slaw and pickles and serve.
Tips, storage & swaps
Use jackfruit canned in brine or water; jackfruit in syrup is ripe and sweet and will not work. For extra-crispy edges, spread the sauced jackfruit on a lined tray and roast at 220°C (425°F) for 10–15 minutes. Traditional Worcestershire contains anchovies, so make sure yours is labelled vegan. The filling keeps for 4 days in the fridge or 3 months frozen. Jackfruit is low in protein, so add a can of drained white beans if you want more.
