Hearty Minestrone
★★★★★★★★★★ No reviews yetA thick Italian vegetable soup packed with beans, small pasta and greens in a tomatoey herb broth. A complete, budget-friendly meal in one pot.
Method
- Heat the oil in a large pot over medium heat and cook the onion, carrot and celery with a pinch of salt for 8–10 minutes until soft.
- Add the garlic, courgette and dried herbs and cook for 3 minutes.
- Stir in the tomato paste and cook for 1 minute, then add the chopped tomatoes, stock and bay leaf.
- Bring to the boil, then simmer for 15 minutes so the vegetables become tender and the flavours meld.
- Add the beans and pasta and simmer for 8–10 minutes, stirring now and then, until the pasta is just cooked.
- Stir in the kale and cook for 2 minutes until wilted, then remove the bay leaf and season well with salt and pepper.
- Serve with a drizzle of good olive oil and a spoonful of vegan pesto or a sprinkle of vegan parmesan.
Tips, storage & swaps
The pasta keeps absorbing liquid, so if making ahead, cook it separately and add to each bowl; add more stock when reheating. Keeps for 4 days in the fridge. Use gluten-free pasta or swap it for rice or diced potato to make it gluten-free. Throw in whatever seasonal vegetables you have: green beans, peas and squash all work.
Every recipe on itsvegan is 100% plant-based: no meat, fish, dairy, eggs, honey or gelatin. Always check packaged ingredients such as chocolate, bread and wine for hidden animal products.
