Homemade Almond Orgeat Syrup
★★★★★★★★★★ No reviews yetA fragrant almond and orange-flower syrup for tiki drinks such as the mai tai, and for coffee and desserts. Easy to make at home, and naturally vegan.
Method
- Toast the almonds in a dry pan over medium heat for 3–5 minutes until lightly golden and fragrant (optional but adds depth). Leave to cool.
- Pulse the almonds in a food processor until coarsely ground.
- Bring the 350 ml water to a simmer in a saucepan, add the ground almonds, take off the heat, cover and leave to steep for at least 2 hours (or overnight in the fridge).
- Strain through a muslin-lined sieve or nut-milk bag, squeezing firmly. Measure the almond milk.
- Return the almond milk to the pan and add an equal volume of sugar (about 300 g for 300 ml). Warm gently, stirring, just until the sugar dissolves; do not boil.
- Cool, then stir in the orange flower water, almond extract and vodka or brandy, if using. Bottle and refrigerate.
Tips, storage & swaps
Uses: orgeat is essential in the mai tai and Japanese cocktail, and lovely in iced coffee, lemonade or over fruit. Shake before use, as it separates naturally.
Keeps: about 2 weeks in the fridge, longer with the added spirit.
Allergy note: contains tree nuts.
Sugar: in the US some white cane sugar is filtered through bone char; strict vegans may prefer beet, organic or certified vegan sugar.
Shop-bought orgeat is usually vegan too, but check the label for honey or non-vegan colourings.
Every recipe on itsvegan is 100% plant-based: no meat, fish, dairy, eggs, honey or gelatin. Always check packaged ingredients such as chocolate, bread and wine for hidden animal products.
