Method

  1. Put the mint leaves, lime wedges and sugar or syrup in a sturdy highball glass.
  2. Press gently with a muddler or the end of a rolling pin 4–5 times to release the lime juice and mint oils; don’t shred the mint, or it turns bitter.
  3. Fill the glass with crushed ice.
  4. Top with soda water and stir gently from the bottom to mix.
  5. Garnish with a mint sprig and a lime wheel, and serve with a straw.

Tips, storage & swaps

For a classic mojito: add 50 ml white rum before the ice.

Flavour twists: muddle a few raspberries or slices of cucumber with the mint, or replace half the soda with ginger beer.

Sugar: in the US some white cane sugar is filtered through bone char; beet, organic or certified vegan sugar avoids this.

For a crowd: muddle mint, lime and sugar in a jug, add ice and soda just before serving.
